Milk fed Porcelet and Planeta Chardonnay
Entering kitchen life at the age of 13, Justin’s first job was as a pot washer at an Italian restaurant in Vancouver. There he start-ed his steady climb up the culinary ladder. With no formal cu-linary training, Justin began a letter writing campaign to the top chefs in North America. This started a journey that would take him zig-zagging across the continent and as far away as Aus-tralia. Stops included the Prince of Wales Hotel in Niagara on the Lake, Restaurant Daniel in New York City, The French Laun-dry in Napa Valley, The Inn at Little Washington in Virginia, Est Est Est in Melbourne and most recently The Peninsula Beverly Hills Hotel. During his tenure as Chef de Cuisine, at the Pen-insula, the restaurant earned the accolade of finest Hotel dining in North America by Travel and Leisure Magazine in late 2003.
In May of 2005, Justin arrived in Bermuda to take over the stoves at Waterloo House and begin applying the knowl-edge that he has been acquiring over the last 20 years since that first shift washing pots. Less than one year later, he was awarded the Bermuda Gold Award as the Best Chef in Bermu-da, 2006. In addition to the culinary arts, Justin is a keen sail-or and enjoys escaping from the kitchen to get on the water.
