Overview

Curiously, Sauvignon Blanc was the very first wine Inama bottled. The idea was to prove that the lava hills of the Soave Classico are world-class in terms of white wine potential. So they decided to plant an "international" variety to prove the region's worth. As it happened, their Sauvignon, planted in the late 80s, turned out completely different compared to anything else in the world. None of the grassy, pepper and cat's pee on a gooseberry bush here, just masses of structure and a host of exotic, Mediterranean flavors including citrus, pineapple, passion fruit and coffee beans.

Vinification
The must is allowed to settle for 24-36 hours at 5°C. Fermentation takes place in stainless steel vats, followed by malolactic fermentation.
